One of the first things we encountered was the incredible variety of street food. From the classics like isaw (grilled chicken intestines) to the sweet treats, there’s something for everyone.
The food experience in Carbon is truly "unfiltered." We stopped at several stalls to try different local delicacies. One of my favorites is always the fresh puso (hanging rice). There's something so authentic about eating rice out of a coconut leaf while standing in the middle of a bustling market. We also tried some grilled pork and chorizo—the smoky smell alone was enough to make us stay for a second round! Jessa was particularly excited about the fresh seafood available, and seeing the massive piles of fish and shellfish always reminds me of how close we are to the ocean, even in the middle of the city.
Beyond the food, we also spent some time exploring the shopping side of Carbon and Colon. It’s the oldest national road in the Philippines, and you can find almost anything here—from clothes and shoes to electronics—at prices that are far better than what you’ll see in the malls. It’s a bit of a maze, but finding a great bargain is part of the fun.
