Good afternoon and welcome back to VibePinas! Today was one of those days that perfectly captures why we love living here in Ginatilan, even with the challenges. We decided to head down from our mountain sanctuary into the heart of the town for a bit of a culinary adventure. Our mission? To visit the local fish market and find something special for dinner.
Walking through the Ginatilan market is always an experience. It’s vibrant, loud, and smells like the freshest catch you can imagine. We were on the lookout for octopus, and we weren’t disappointed. We managed to find some beautiful, fresh octopus that was just pulled from the sea. There’s something so rewarding about buying directly from the local fishermen; you know exactly where your food is coming from, and you’re supporting the community at the same time.
Once we got back to our mountain home, the real "fun" began. Neither Jessa nor I are exactly experts at preparing octopus. It’s a bit of a process, and let’s just say there was a lot of laughter (and maybe a little bit of confusion) in the kitchen. Jessa, as always, jumped in with her usual "unfiltered" energy, while I tried to figure out the best way to cook it so it wouldn't end up like a rubber band!
We also spent some time talking about our life here. I know some people wonder why I chose to stay in the Philippines and live this simple mountain life instead of taking Jessa and Liam back to Norway. But for me, the answer is simple: I am happy. Our life here—with the fresh air, the incredible views, and the genuine kindness of the people—is a "happy life" that money can't buy. We’re building something real here, one day at a time.
Dinner ended up being a bit of a trial-and-error situation, but sitting on our balcony, sharing a meal we prepared ourselves while watching the sunset over the mountains, made every bit of the effort worth it. It’s not about having everything perfect; it’s about the joy of the journey and the family we're building together.
