I, Aksel, take you through a typical, albeit rainy, day of mountain living in Ginatilan. Life here is all about embracing the simplicity and the natural rhythms of the environment, even when the weather doesn't cooperate.
The day started with a bit of a challenge: the rain. In the mountains, rain isn't just a minor inconvenience; it changes everything. It becomes incredibly peaceful and relaxing, perfect for a long sleep, but it also means we have to adapt our plans. Despite the downpour, the view remains breathtaking—the lush green "probinsiya" (province) landscape shrouded in mist is something I never get tired of looking at.
One of the highlights was our meal prep. We had quite a feast planned with "all the meat we can handle." Jessa and I worked together to prepare a variety of dishes, including pork feet. I’ve learned that here in the Philippines, pork feet can be made into something truly delicious, often cooked with local favorites like pineapple juice or Sprite to give it that distinct Filipino flavor. It’s a far cry from the way we might handle meat back in Norway, and I’m always eager to see how Jessa puts her local spin on things.
Because of the rain, we spent a lot of time inside our mountain house. It’s a simple structure, but it’s our sanctuary. Some might wonder how it holds up against strong winds or typhoons, but for us, it’s home. It’s sturdy enough for our needs, and most importantly, it keeps us connected—even up here in the mountains, we managed to have internet, which is essential for sharing our journey with all of you.
Our dogs are also a big part of the experience. They love the mountain life just as much as we do, and seeing them enjoy the space—even when it's a bit muddy—always brings a smile to my face.
The rain eventually provided a perfect backdrop for rest. There’s something uniquely soothing about the sound of rain hitting the roof while you’re tucked away in the mountains. It forces you to slow down and just appreciate the moment. We don't always need a packed schedule; sometimes, just being together, cooking a hearty meal, and watching the rain fall over the Cebu mountains is exactly what we need.
Throughout the day, I’m reminded of why I chose this life. It’s about being true to yourself and finding joy in the simple things. Whether it's the taste of a home-cooked Filipino dish or the quiet of a rainy afternoon, these are the moments that make our stay in the Philippines so special. It’s a beautiful, relaxing place, and I wouldn't trade this "sarap buhay probinsya" (delicious province life) for anything.
